Season Changes 


After a relatively balmy few weeks, with lots of sun and mid-day temperatures in the low 50s, today it's gray and 20 degrees out there.

Brrrr! We installed gaskets in all the outside-wall electrical outlets yesterday, and this weekend we're sealing up a few windows — light will come in, but little cold air if we do it right.

So, it's on to winter around here, with a snow forecast this week to make the previous dustings we've had look like play. Winter coats, caps, scarves, and gloves are out of their summer hiding places and ready for service.

We had a glorious Thanksgiving week. Yes, week! My beloved took vacation days to give her nine days off, and while we did play and rest, we mainly had a working holiday. Decluttering was the goal, and we did that from the garage to the laundry room, going through scores of boxes and totes holding papers and books, precious things and trash, clothes and electronic miscellania. We accomplished most of the things on our to-do list, and plan to finish it all up before the end of the calendar year. Lightening the load in the house lightens the spirit!

Today, I did the last of the Thanksgiving dishes, and am making a favorite soup. We had a free-range chicken this year, instead of turkey, but the recipe works with either:


Sage's Superb Chicken Soup

Ingredients

Dark meat off bones of 2 cooked chickens or 1 cooked turkey
1 - 2 cups water
3 - 4 cups chicken broth
5-6 small oions sautéed in olive oil spray
2 parsnips, peeled and cubed
1 bag baby carrots
lots of celery, sliced
juice of 1 ripe lemon
salt to taste
pepper (generous sprinkling)
lemon pepper (even more generous sprinkling)
approx. 1 TBSP parsley
generous tsp. of thyme

Preparation
Simmer bones and chicken in water, broth, and lemon pepper for 1 hour.
Refrigerate for at least 18 hours.
Take meat from bones and discard bones and skin.
Saute onions; prep parsnips and celery.
Add onions, parsnips, celery, carrots, lemon juice, pepper, more lemon pepper, parsley, thyme, salt to broth.
Simmer about 2 hours

Serves 4
